Michelin-starred favorite has been a generational staple in food-fickle LA

In a city where restaurants can disappear almost as quickly as they open, Providence has become something rare: A place people grow up with.

For 21 years, chef/owner Michael Cimarusti’s seafood-focused Los Angeles restaurant has remained one of the city’s most celebrated dining destinations. Providence holds three Michelin stars as well as a Michelin Green Star for sustainability, and was ranked No. 32 on North America’s 50 Best Restaurants list in 2026.

Cimarusti himself won the James Beard Award for Best Chef: West in 2019.

Yet when Cimarusti talks about what has kept Providence going for more than two decades, he doesn’t start with the accolades.

“We had kids that would come here, like their parents would bring them here in strollers, 20 years ago,” Cimarusti said. “And now they’re coming in and having tasting menus on their own and then enjoying it with their young families.”

That history is deeply personal to him.

“I feel really blessed and humbled to be part of so many people’s lives,” he said, noting that guests have celebrated birthdays, anniversaries and other milestones inside the restaurant. “So many people hold this restaurant in a very dear place.”

Cimarusti credits much of Providence’s longevity to the people around him. Some members of the team have been there since the beginning.

“The gentleman that greets you when you open the door, he’s been here 21 years,” he said. “Several of our captains have been here for 21 years, and we have runners that have been here for 21 years, and we have chefs that have been here for 21 years.”

That same sense of trust extends beyond the walls of the restaurant.

Providence has spent years developing relationships with the fish purveyors who supply its kitchen. Cimarusti said those suppliers understand exactly what the restaurant expects before a shipment ever arrives.

“The goal is that when we develop relationships with our purveyors, they look at the fish exactly the same way that we do,” he said. “They’re very, very critical about their own product.”

Those relationships mean Providence rarely needs to refuse a shipment. When something does fall short, however, it won’t make it onto a diner’s plate.

“Every once in a while something won’t pass muster and people always will take it back from us, no questions asked,” Cimarusti said.

That uncompromising approach was on display with Providence’s California King Salmon, which has returned to the restaurant after California went several years without a commercial salmon season.

Cimarusti said 2026 marked the first California King Salmon harvest in roughly four years. California fisheries are carefully monitored, and commercial fishing only resumes when assessments show the population is healthy enough to support it.

The salmon’s return is tied in part to something that happened years earlier: rain.

Cimarusti explained that heavy rainfall raises California’s rivers, improving conditions for salmon returning from the ocean to spawn and giving young fish a better chance of eventually making their way back to sea.

“In the case of the California king salmon, environmental reasons have as much to do with the health and strength of that fishery as fishing itself,” he said.

And the cycle takes years. Cimarusti said another wet California winter could help create healthier salmon returns three or four years from now.

That connection between the environment, the fisherman and the plate is central to Providence’s approach to sustainability. Cimarusti has long advocated knowing where seafood comes from, understanding how it was harvested and being willing to serve something else when the right product isn’t available.

“Everything that we do is really a celebration of wild fish,” Cimarusti said, calling King Salmon “one of the most regal fish anywhere in the world.”

For Cimarusti, the philosophy behind that elaborate plate begins with something surprisingly simple.

“My standards are simple. I only want the best,” he said. “We work really, really hard to get the finest ingredients that we can.”

Those standards, along with relationships built over decades with employees, suppliers and diners, may help explain how Providence has endured while Los Angeles’ restaurant landscape continues to change around it.

“It’s a responsibility that we don’t take lightly,” Cimarusti said. “And I think people feel that. And I think that’s one of the reasons that we’ve been around for so long.”
